Chickpea Stew

Despite the simple name, this is an extremely flavorful soup that can be served immediately or within two days. Very high in protein.

Makes 4 servings:

3 cups of water

1 can chickpeas (17 ounces), drained

½ T. olive oil

1 t. dried sage

1 t. dried rosemary

½ t. cinnamon

Salt and pepper to taste

Fresh parsley (optional) to garnish

In a hot water kettle, combine all ingredients except for the parsley. Bring it to a boil, then lower the heat and simmer, with the lid partially on, for 20 minutes. Serve immediately, garnishing with parsley if desired.
